Scanners

A scanner in keyboard mode works as well as a paired one: Enter is a scan, whatever the code looks like. On a device with no scanner at all the camera reads barcodes, and nothing it sees is stored.
Printers

Receipts print on the roll from the same layout engine the console uses, so what you set centrally is what comes out. A sales order goes as a letter to its own printer rather than to the roll - an AirPrint printer already on the network will do, with nothing to install. Printing can be unticked before a sale finishes.
Card readers

Chosen per terminal, so one estate can run Stripe in one store and Square in another. Tap, chip, or key it in. Card details never reach our servers.
Which reader, which scanner, which printer: set once in the console and sent to the device with its pairing code. The terminal's own settings screen is for seeing what it is connected to and connecting it, not a second place to configure the estate.
